What you need:

  • 1 head Romaine lettuce, washed
  • 2 oranges, sectioned
  • Few rings of purple onion
  • 1/4 c. oil
  • 2 tbsp. orange juice
  • 2 tsp. vinegar
  • Pinch of dry mustard
  • 1/4 tsp. salt

What you do:

  1. Tear romaine into bite-sized pieces. Section oranges. Toss romaine, orange sections and onion. Mix dressing ingredients and pour over salad, tossing well. Chill in refrigerator for several hours to blend flavors. This is a colorful salad that goes well with any meal.
